Webster's Baked Beans
- 1 lb (454 g) Webster Farms Dried Beans
- 2 tsp (10 ml) dried mustard
- ½ cup (125 ml) brown sugar
- ⅔ cup (165 ml) molasses
- 1 tsp (5 ml) salt
- ¼ tsp (1 ml) pepper
- 1/6 lb (75 g) salt pork or bacon
- 1 tsp (5 ml) vinegar
- 1 medium onion
Soak beans overnight in plenty of water to cover.
Or: Place beans in a large pot with 6 cups of water, boil 5 minutes covered, remove from heat, and let stand 1 hour. Drain and discard water, then rinse.
Place rinsed beans in a large pot with 6 cups of water. After boiling 5 minutes, simmer until beans are tender, approximately 30 minutes. To test, remove a bean and blow on it — if the skin cracks, they are ready. Avoid overcooking (mushy) or undercooking (hard). Drain, rinse, and place in slow cooker.
Combine remaining ingredients except the onion with 1 cup warm water, stir well, and pour over beans. Stir gently, add enough water to cover, then place quartered onion on top. Cook on high for 4–6 hours covered. These may also be done in the oven at 300°F / 150°C for 4–6 hours covered. Add water during cooking if necessary. Avoid excessive stirring.
Makes approximately 6 cups.
